ROSSO DI MONTEPULCIANO by Casale Daviddi Farm is a wine with a ruby color and brilliant clarity, a characteristic and intense parfume, with scents of violets and a dry, harmonious, slightly tannic.
Grapes: Sangiovese 85%, Canaiolo Nero 10% – Mammolo 5%
Harvesting Period: End of September – Early October
Vinification Method: After harvest time the grapes from the vineyard of Abbadia di Montepulciano, Acquaviva, Gracciano and Valiano were carefully selected. The grapes were then destemmed and crushed and maceration took place over a period of 10-12 days during which time the wine also completed its alcoholic fermentation at a temperature not exceeding 28°C (82,4°F). The wine was then racked and had completed its malolatic fermentation within the end of the year, partly in stainless steel tanks and after in slavony oak barrels.
Maturation Method: The wine aged for a period of 6 months in oak casks in 25 and 50 Hl slavony oak barrels.
Goes well with: Soups and traditional first courses, lightly matured cheese, Cold cuts. Serve at about 18°C (64,4°F).
