Description
The ROSSO DI MONTEPULCIANO from the Azienda Casale Daviddi is a wine characterized by a lively ruby color and brilliant clarity, a characteristic and intense aroma, also with a scent of violets and a dry, harmonious, slightly tannic flavor.
Grapes: Sangiovese 85%, Canaiolo Nero 10% – Mammolo 5%
Harvest period: end of September – first ten days of October
Winemaking techniques: After harvesting, the grapes from the vineyards of Abbadia di Montepulciano, Acquaviva, Gracciano and Valiano are carefully selected.
The bunches are then de-stemmed and crushed and macerated for a period of 10-12 days during which the wines complete the alcoholic fermentation at a temperature not exceeding 28 ° C. The wines completed the malolactic fermentation, by the end of the year, first in steel and then in Slavonian oak barrels.
Refinement techniques: The wine has spent a period of refinement of about 6 months in Slavonian oak barrels with a capacity of 25 to 50 Hl.
Suggested pairings: Soups, first courses of typical Tuscan cuisine, medium-aged cheeses, cold cuts. Serve at a temperature of around 18 ° C.
