Description
Vino Nobile di Montepulciano from the Casale Daviddi winery comes from the best grapes, carefully selected from the harvest and it is a sure expression of quality due to the company’s choice to control the entire production process with meticulous attention. It is a wine with a complex, elegant and balanced structure. Intense ruby color, with elegant aromas, with hints of violet and undergrowth. It has a finesse character, with a soft and delicate finish.
Grape varieties: Sangiovese 90%, Mammolo and Canaiolo Nero 10%
Harvest period: end of September – first ten days of October
Winemaking techniques: At the time of harvesting, a very careful selection of the grapes from the vineyards of Abbadia di Montepulciano, Acquaviva, Gracciano and Valiano is made. The bunches are then de-stemmed and crushed and macerated for a period of 12-15 days during which the wines completed the alcoholic fermentation at a controlled temperature of not more than 28 ° C. The wines completed the malolactic fermentation by the end of the year, first in steel and then in French oak barrels.
Refinement techniques: The wine spent a period of refinement of about 25 months in French oak barrels of 25 Hl capacity.
Suggested pairings: First courses of traditional cuisine, game, red meats, mature cheeses and cold cuts. Serve at a temperature of around 18 ° C.
